Happy 4th!
Wherever you are, whoever you are with, hope you are having a great holiday weekend! Our weekend always consists of spending it with family at the Jersey shore. I had the BEST salad that I immediately came home and wanted to shout it from the rooftops.
AVOCADO CHICKEN SALAD
Ingredients
- 2 cups cooked, shredded chicken
- 2 avocados
- 1/4 cup mayo
- ¼ cup diced red onion
- 1 tablespoon fresh cilantro
- 2 teaspoons lime juice
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
MIX AND SERVE!
(The recipe we had also had sliced grapes, so if that tickles you - go for it!)
This was definitely a healthier version of chicken salad and with the creaminess of avocado, I wanted to post up in front of the bowl and not move.
